As long as it is using Euro, the debt problem in Greece is inmaterial for tourist.

Separately, it is not a good time to visit Greece or Europe now with the Iceland vocalnic ashes flying over us!

I am nit sure what you mean on the best time to visit Greece. Greece adopts the euro do while the country can be in shambles, it is still using the euro-meaning it is still expensive to visit!
